First: subterfuge. In their eyes, the less people trust the leaks, the better.
The team is currently refining patches for a smooth game release, so any video you see online may not showcase the ultimate game quality.

Although it might be impossible to reverse the situation now, Ubisoft doesn’t necessarily need to maintain a long-term solution. The release date for Assassin’s Creed Shadows is set for March 20th of this year, so those who wish to steer clear of spoilers won’t have to cover their ears for an extended period.
Assassin’s Creed Shadows Fights Off Leaks

This is hardly the first time Assassin’s Creed Shadows has sprung a bit of a leak.
Through a breach on Steam, details about an upcoming DLC expansion for one of their games were exposed. Gamers managed to catch a glimpse of the expansion’s title, as well as a concise summary of its content.
Additionally, there was an unauthorized release of an art book containing various game content such as outfits, weapons, locations, and more. This leak wasn’t traced back to a well-known source like Steam, thus its dissemination was somewhat restricted.
This year has seen two incidents of leaks so far, and we haven’t even reached the end of February yet. Given this rate, it’s possible that the project may continue to leak. However, it’s difficult to foresee anything more substantial than “an early version of the complete game,” unless perhaps there’s an issue with game piracy.
