As a huge fan of Europa Universalis 5, I can tell you it’s a seriously complex game – even for those of us who play a lot of grand strategy titles! There’s just so much to learn, from all the different menus and terms to the various ways you can view the map. Honestly, the best advice I can give anyone starting out is to learn the most important hotkeys. They really speed things up because you’re clicking on the same things constantly over the course of the game, which spans centuries! Mastering those shortcuts makes a huge difference.
You can also customize your controls to create shortcuts. Just go to the Menu, then Settings, and select Input Bindings. You’ll find plenty of unused buttons and keys you can assign.
